The kitchen is in the hands of head chef Dan Graham who has worked under top chefs including Michel Roux at Le Gavroche.  The Wentworth Restaurant offers contemporary British cooking with a fine dining menu in the evenings and a Sunday lunch menu whilst the Malton Brasserie is open daily for lunch and dinner offering brasserie classics and a daily specials board.

At the Talbot we believe in the right work to life balance which is why our kitchen team work a 4 days on 3 days off weekly rotation with overtime paid when taken.

From an Apprentice Chef to Senior Sous we are focused on training and developing the next generation of chefs to be ready for a changing industry. We also actively encourage and make time for our team to enter local and national awards as well as support and work with the Team at our Malton Cookery School.

Our kitchen is the heart of our business and we are proud to say has been instrumental in achieving the following:

The Talbot offers contemporary British cooking delivering delicious food throughout whether you are dining in the Bar and Brasserie or the Wentworth Restaurant. We champion the use of fresh produce from local suppliers and our seasonal menus are created by Head Chef Dan Graham. Expect a journey of exciting flavours and textures showcasing the best of Yorkshire produce.

Malton Brasserie is the Talbot's newest everyday dining option and the place to bring the whole family for a totally relaxed meal. No tablecloths, no nonsense, just good simple food, quick service and at a great price.

Malton Brasserie also offers a changing specials black board, award winning Malton beer and a kid’s menu with delicious and good value dishes so children should feel really at home. Do come in a t-shirt, bring the kids and enjoy Malton’s newest and most relaxed place to eat.

Wine & Spirit Education Trust

The Wine & Spirit Education Trust (WSET) was founded in 1969 to provide high quality education and training in wines and spirits. Since then, WSET has grown into the foremost international body in the field of wines and spirits education, with a suite of sought-after qualifications.

Requirements: A passion for wine and service, minimum 6 months service and a signed training agreement. We aim to have 2 members of the team complete the level 2 exam per year.

Claire Beaumont completed her level two exam in 2015 and had this to say: ‘I have always had a good grounding in wine but wanted to really push myself to learn more and develop my ability to train the team here at the Talbot. This was a great opportunity and I am grateful to the Talbot Hotel for paying and giving me the time to study, I am hoping to start my level 3 soon’

NVQ Various Levels

In partnership with Babcock International Group the Talbot Hotel makes time and helps promote as many of our team members as possible to complete a wide range of NVQ’s relevant to their career progression.

  • NVQ Level 2 in Housekeeping
  • NVQ Level 2 Diploma in Business Administration
  • NVQ Level 2 Team Leader
  • NVQ Level 2 Reception & Front of House
  • BTEC Apprenticeship L2 NVQ Certificate in Business and Administration
  • BTEC Apprenticeship L3 NVQ Diploma in Business Administration
  • BTEC Apprenticeship L2 Food and Beverage
  • NVQ Level 3 Diploma in Front of House

Requirements: Available after 3 months’ probation is completed and Babcock requirements are met.

H&S Training and First Aid

The Talbot Hotel is committed to ensuring the health and wellbeing of all our team is looked after and undertake regular H&S training with the teams. Regular First Aid training is also made available to those team members who show particularly high levels of responsibility and maturity.
