Nick is the development Chef at the Black Swan in Oldstead. Starting as a pot wash at aged 15, Nick moved to the Black Swan in 2013 and moved to Senior Sous before taking on his current role in 2016.Nicks food passion is with wildfood, preservation and finding ways to use less meat.
